Baked & Layered Smoked Salmon

This baked and layered smoked salmon dish is a delicious way to kick off any meal. It is a perfect blend of pastry, salmon, sour cream and chives that is sure to please everyones taste buds.

The recipe below is enough to serve a party of six and can be pulled off in less than 30 minuets.

Ingredients

4oz smoked salmon trimmings
12 slices of Smoked Salmon
8 sheets filo pastry 2 oz butter, melted
4 fl oz double cream
1 bunch chives
salt
pepper
1 tsp chopped dill
8 fl oz soured cream

Putting Everything Together

1. Pre-heat oven at 425 degrees.

2. Using a 3 inch diameter cutter, cut the filo pastry into 24 rounds. Lay 12 of these side by side on a baking sheet and Brush with butter then lay the other round on top.

3. Bake these in your oven for 5 minutes, or until golden brown. Remove and leave to cool.

4. Chop the salmon trimmings finely and place in a mixing bowl.

5. Using a spoon gradually mix in the double cream. Then add your chives, salt and pepper.

6. In another bowl mix your chopped dill and soured cream. If the sauce is too thick add a little bit of water.

7. Cut the smoked salmon slices into 3″ diameter rounds using the same cutter as for the pastry. Allow three 3 pieces per portion. On a plate, place alternate layers of pastry, creamed salmon and smoked salmon. Repeat this process twice more, finishing with smoked salmon on top. Garnish with dill and serve.
