Ingredients
- 3 lb. catfish
- ¼ cup cornmeal
- ¼ cup flour
- 2 eggs, beaten
- 1 12-ounce beer
- ¼ cup minced onion
- 3 cups vegetable oil
- salt and pepper to taste
Ok now that we have all of our ingredients together for our beer battered catfish recipe, lets start putting things together.
Break out a medium mixing bowl and start mixing your flour, cornmeal, salt and pepper together. Blend all ingredients together thoroughly!
Next in yet another medium sized mixing bowl begin beating your eggs while adding your beer and onion.
You have a few different options as far as the catfish goes, you can cut the fish up into cubes or strips. While cutting begin heating your vegetable oil in a large skillet. When the oil is nice and hot you can begin coating and cooking the catfish to perfection.
Roll each cube or strip of catfish in the flour mixture, then into your egg mixture, then back again into the flour mixture. Then place each in your hot oil and cook until the fish turns a golden brown.
After removing the catfish from the hot oil, place on paper towels to remove any excess oil.
